Ingredients

- 2 c cooked millet
- 15 oz tofu
- 10 oz shiitake mushrooms
- 0.75 c diced onion
- 1 c diced red pepper
- 4 tbsp Coconut aminos
- 0.5 c Cashews
- 1 Jalapeno pepper, finely diced
- 3 tbsp Curry powder
- 0.25 tsp Black pepper
- 0.333 c Pineapple Juice
- 1 tsp Salt, or to your taste
- 1.5 c diced pineapple

Directions

For Tofu
1. Dice and sauté in ¼ cup coconut aminos.
Cashews
1. Lightly dry roast.
Shiitake mushrooms
1. Water sauté.
For the main dish
1. Heat pan on medium-high heat and add ¼ cup water and coconut aminos.
2. Add diced onion, diced red pepper, and diced jalapeño and sauté until softened.
3. Add small amounts of water as necessary.
4. Add curry powder and black pepper and mix.
5. Add cooked millet, salt, tofu, mushrooms, and cashews.
6. Mix until everything is well combined.
Finish and Serve
1. Add pineapple chunks and juice and mix to combine.
