Ingredients

Pickled Carrots and Daikon
- 3 Carrots, medium sized, julienned
- 1 daikon radish
- 2 tbsp Salt
- 0.25 c Sugar
- 5 tbsp White vinegar
- 2 c Hot water

Directions

Preparing the Vegetables
1. Combine the julienned carrots and daikon radish in a bowl and add the salt. Allow it to sit for up to 15 minutes.
2. After, rinse the vegetables with clean water and drain the liquid. Add the vegetables to a clean glass jar.
Preparing the Pickling Liquid
1. Next, add the sugar, white vinegar and hot water in a bowl. Mix it well until the sugar dissolves. Transfer the liquid to the jar with the vegetables.
2. If needed, add more water until the vegetables are completely submerged.
Storing the Pickles
1. Store in the refrigerator until ready to use.
