Main Ingredients
- 5 oz rice noodles
- 1 Carrot, julienned or spiralized
- 1 Zucchini, julienned or spiralized
Peanut Sauce
- 0.25 c Peanut butter, natural
- 2 tsp Ginger, grated
- 1 tsp chilli paste
- 1 clove Garlic, finely diced
- 1 tbsp toasted sesame oil
- 2 tbsp Soy sauce, or tamari
- 1 Lime, juiced
- 0.333 c water, or as needed
Garnish
- 0.25 c peanuts
- 1 stalk spring onion

Directions

Soaking the rice noodles
1. Soak rice noodles in warm water for about 20 minutes until soft; however, be sure they aren't fully cooked yet.
Preparing the peanut sauce
1. On low heat, combine all the sauce ingredients, and add the peanut butter at the end.
2. Add water little by little as needed and whisk until you have a smooth sauce.
Combining the noodles and vegetables
1. Now add the rice noodles and the julienned or spiralized veggies.
2. Keep stirring until the noodles and veggies are fully cooked and well coated with the sauce.
Garnishing
1. Garnish with toasted peanuts and spring onions.
