Ingredients

- 2 c All-purpose flour
- 2.5 tsp Baking powder
- 0.25 tsp Baking soda
- 0.5 c Granulated white sugar, (reserve some for brushing)
- 0.5 tsp Salt
- 0.5 Cold unsalted butter
- 0.5 Heavy cream, Cold
- 1 Egg, Cold

Directions

1. In a bowl, combine flour, sugar, salt, baking power and baking soda.
2. Using a cheese grater, add the cold butter in the flour mix and combine until mixture comes together in the size of large peas.
3. In a separate bowl, whisk together the heavy cream and egg, then add wet ingredients to the dry ingredients. Mix until just combined. DO NOT OVER MIX.
4. On a lightly floured surface, transfer the dough.
5. Flatten the dough and shape into a rectangular. Fold like a piece of paper.
6. Gently knead the rectangular dough in the opposite direction.
7. With a little space between each, cut the dough into 8 equal-sized pieces onto the baking sheet.
8. Place the scones in the fridge from 30 mins.
9. Brush scones with reserved heavy cream and for extra crunch, sprinkle with coarse sugar.
10. Bake at 400 F for 15-18 minutes or until lightly browned.
11. Serve warm.
12. Here we served with peaches and cream: cook down cut peaches with Grand Marnier, vanilla, brown sugar and lemon. Once softened, set aside and use to spread over scones and cream.
