Ingredients

Pork Loins
- 4 pork loins
- 4 Bacon, precooked for 8 min.
- 0.25 c Dijon ground mustard
- 2 tbsp AP steak seasoning
- 2 tbsp EVOO
Peach Glaze
- 0.5 c crushed peaches
- 3 tbsp Butter
- 2 tbsp Brown sugar
- 1 tbsp Rosemary
- 2 tbsp Bourbon, optional

Directions

Preparation of Pork Loins
1. Preheat your oven to 350° F.
2. Pat dry your pork loins.
3. Brush mustard on the front and back of each loin as well as steak seasoning.
4. Once your loins are seasoned, take your bacon and wrap around the outside and secure with a toothpick. If your loins are not perfectly circular, you may cut off a small part of the loin.
5. Heat an oven safe skillet to medium high heat and add in your oil.
6. Once your skillet is hot, sear your pork on one side until slightly golden. Once your pork is seared on one side, flip and then add to the oven for 7 minutes of cooking. 145F for medium and 160 F for fully cooked.
7. Take it out of the pan and then set it to the side to rest.
Preparation of Glaze
1. While your pork is cooking in the oven, make your glaze.
2. Add your peaches to a skillet set to medium heat. Cook for 1 minute and then add in your bourbon.
3. Cook off your bourbon for about 2 minutes until you smell no more alcohol.
4. Add in your butter, brown sugar and rosemary. Cook your glaze for another 2 to 3 minutes until bubbly and starting to thicken. If your sauce gets too thick, you can always add a little bit of butter to loosen it up.
Final Steps
1. Once your glaze is finished, add it to your pork loin.
2. Create your meal preps with rice and vegetables of your choice and enjoy!
