Ingredients

Fried Potatoes
- 2 lbs Potatoes, peeled, chopped into chunks
- 1 tsp sodium bicarbonate
- 0.5 tsp Salt, or to taste
- Oil, as needed
Sauce
- 1 tbsp Olive oil
- 0.5 Onion, finely diced
- 2 cloves Garlic, minced
- 1.5 tsp Sweet paprika
- 2 tsp Smoked paprika
- 0.5 tsp Cayenne pepper, adjust to desired spiciness
- 1 tbsp Tomato paste
- 1 tbsp Flour
- 0.75 c veggie stock
- 1 tsp sherry vinegar
- 0.25 tsp Salt, or to taste
- 0.25 tsp Pepper, or to taste

Directions

For the potatoes
1. Bring water to a boil in a pot, add baking soda (helps crisp the potatoes), then add potatoes and cook for 7 minutes.
2. Drain, cool, and dry completely, ensuring they don't touch.
3. Spread potatoes in a single layer in your air-fryer basket.
4. Lightly spray with oil and air-fry at high heat until golden brown and crispy, about 15-20 minutes, shaking the basket halfway through.
For the sauce
1. Heat olive oil in a pan over medium heat.
2. Sauté onion until translucent, about 5 minutes.
3. Add garlic and cook for 30 seconds.
4. Add paprika, and cayenne pepper (adjust to your spice preference) and cook for 1 minute.
5. Stir in tomato paste and broth (or water), and simmer for 5 minutes.
6. Let the sauce cool slightly, then blend with vinegar until smooth and creamy.
7. Season with salt and pepper to taste.
For serving
1. Sprinkle the crispy potatoes with sea salt and serve alongside the “Salsa Brava”.
