Ingredients

- 1 Rigatoni, entire box
- 12 oz Ricotta
- 1 lb hot Italian sausage
- Parmesan cheese
- 1 Yellow onion, finely diced
- 5 Garlic cloves, smashed
- Fresh truffle
- white truffle oil
- Red pepper flakes

Directions

1. Cook your pasta to al dente per package instructions. reserve about a cup of pasta water
2. Cook the sausage completely then remove from pan. Keep the fat in the pan and sautee your onions and garlic until softened.
3. Add the cooked pasta and some pasta water
4. Kill the heat and add the ricotta and toss to combine. Add more pasta water if its too thick. Season with a little salt and a generous amount of black pepper
5. Plate and grate some fresh truffle and red pepper flakes over top. Or give it a drizzle of truffle oil if you can't find fresh truffles
