Ingredients

For the streusel
- 3 Tbs Walnuts, or almonds, finely chopped/sliced
- 3 Tbs Coconut sugar
- 10.5 Tbs Coconut oil, solid
- 10.5 Tbs Superfine blanched almond flour, not almond meal
- 0.5 tsp Ground cinnamon
- 0.125 tsp fine sea salt
For the cake
- 10.5 cup Superfine blanched almond flour, not almond meal
- 0.33333333333333331 cup arrowroot flour
- 0.5 tsp Baking soda
- 0.25 tsp fine sea salt
- 2 Large eggs, at room temperature
- 5 Tbs Honey
- 5.5 tsp Vanilla extract
- 1 tsp Lemon juice, or apple cider vinegar
- Cooking spray, such as coconut or avocado oil spray

Directions

1. Heat the oven to 350°.
2. Grease an 8x8" baking dish with cooking spray.
3. Make the streusel:
4. In a medium bowl, add the the walnuts or sliced almonds, coconut sugar, coconut oil, almond flour, cinnamon and salt. Using a fork or your fingers, blend together until it's the texture of wet sand. Set aside.
5. Make the cake:
6. In a large bowl, whisk the almond flour, arrowroot, baking soda and salt.
7. In a medium bowl, whisk the eggs, honey, vanilla and lemon juice or vinegar.
8. Add the wet ingredients to the dry and stir until completely blended - there should be no visible almond flour crumbs.
9. Scrape the thick batter into the greased baking dish and smooth to an even layer with a spatula or slightly damp fingers. Evenly sprinkle the streusel topping all over the cake.
10. Bake for 26-30 minutes, until a toothpick comes out almost entirely clean. Let cool for at least 20 minutes before slicing and serving.
