- 1 block Gruyere cheese, grated
- 1 tbsp Olive oil
- salt and pepper, to taste
- 8 Flour tortillas
- olive oil spray
- 2 tbsp Mayonnaise
- 2 tbsp Ketchup

Directions

Preparation of the steak
1. Pre-heat oven to 375 degrees Fahrenheit.
2. Heat 1 tablespoon of olive oil over medium-high heat.
3. Add the shaved rib eye steak to the skillet and season with salt and pepper to taste.
4. Cook the steak for about 2-3 minutes per side or until it's cooked to your desired level of doneness. Avoid overcrowding the skillet to ensure the steak cooks evenly.
5. Turn off heat and add the Gruyere to the pan with the steak, mixing well to combine.
Laying out the tortillas
1. Lay out the flour tortillas on a clean work surface.
2. Divide the cooked cheesesteak evenly among the tortillas.
3. Tightly roll up each tortilla, starting from the filled side and rolling towards the other end.
4. Place on a parchment-lined baking sheet, then spray with olive oil then bake for 10-12 minutes until golden brown and crispy.
Preparing the fry sauce
1. Meanwhile, make your fry sauce by combining ketchup and mayonnaise in a small bowl and mix well to combine.
Final step
1. Remove taquitos from the oven and serve warm alongside fry sauce.
