- 2 8oz blocks Cream cheese
- 0.5 c Sugar
- 2 Eggs
- 1 tsp Vanilla extract

Directions

Preparation
1. Preheat oven to 350, line a cupcake tray with paper liners and put an Oreo in the bottom of each one.
Mixing the Ingredients
1. Beat together the cream cheese, sugar, vanilla and eggs in a mixer until smooth.
2. Once smooth, fold in the roughly chopped Oreo pieces.
Baking
1. Scoop the cream cheese mixture into the cupcake cups and bake for 15 minutes or until the mini cheesecakes are just set.
Cooling and Serving
1. Let cool on the counter for 30 minutes before transferring to the fridge for 2 hours before serving.
