Ingredients

Chicken
- 1 lb chicken breast or chicken thighs
- 4 cups Neutral oil, for frying
- 0.5 cup Cornstarch
- 0.5 cup all-purpose flour
Chicken Marinade
- 1 tbsp grated garlic
- 1 tsp Salt
- 0.25 tsp White pepper
- 1 tbsp Shaoxing wine
- 0.25 tsp Baking soda
- 1 Egg
Orange Sauce
- 0.5 cup freshly squeezed orange juice
- 1 tbsp Orange zest
- 0.5 tsp Cayenne pepper, optional
- 2 tbsp Brown sugar
- 1 tbsp Light soy sauce
- 1 tbsp White vinegar
- 0.25 cup water or unsalted chicken
- 1 tbsp Cornstarch

Directions

Juicing the oranges
1. Juice 1-2 oranges to get 1/2 cup of orange juice.
Preparing the chicken
1. In a mixing bowl, combine chicken, garlic, salt, white pepper, Shaoxing wine, baking soda, and egg.
2. Mix well and marinate for 20 minutes.
Coating the chicken
1. Add all-purpose flour and cornstarch to a bowl and mix well.
2. Add the marinated chicken and coat evenly.
Frying the chicken
1. Heat 4 cups oil to 350F, carefully add the chicken in batches and fry for 3 minutes until they turn lightly golden brown.
2. Transfer the chicken onto a cooling rack and let them cool for a few minutes.
3. Bring the oil temperature back to 350 F.
4. Add the chicken back and fry for additional 2 minutes until golden brown.
Preparing the sauce
1. Make the sauce by combining the listed ingredients.
2. Turn the heat to medium-low and pour the sauce into a wok.
3. Stir until the sauce thickens.
Finalizing the dish
1. Add the chicken and mix until all the chicken is coated with the sauce.
2. Garnish with scallions and serve with rice.
