- 5 uncured bacon slices
- 2 tbsp extra-virgin olive oil
- 1 medium Yellow onion, diced
- 3 tsp Garlic, minced
- 1 lb ground chicken
- 1 tsp Garlic powder
- 1 tsp pink Himalayan salt
- 1 tsp coarse black pepper
- 4 c Chicken Broth
- 1 6oz can Tomato paste
- 9 oz Gemelli pasta
- 0.5 c Coconut milk
- 0.5 c dairy free mozzarella cheese
- 3 c Baby spinach

Directions

Preparation of bacon and onion
1. In a large skillet, cook chopped bacon over medium heat.
2. When bacon is fully cooked, add diced onion, garlic, and mix well.
3. Cook for about 5 minutes or until onion is translucent, stirring occasionally.
Preparation of ground chicken
1. Move bacon and onion to the side of the skillet and add ground chicken and seasonings.
2. Cook chicken on medium-low until fully cooked, about 8-10 minutes.
3. Stir together with bacon and onion.
Preparation of sauce and noodles
1. Pour in chicken broth and tomato paste and mix well.
2. Bring to a light simmer.
3. Add Gemelli noodles (note: If you are using dried gluten free noodles, boil per their directions and then add to skillet.)
4. Stir in coconut milk.
Final steps
1. Add baby spinach and mozzarella and stir well.
2. Let simmer on medium-low for 5-10 minutes until sauce thickens.
