Ingredients

Old Bay Shrimp
- 1 lb Large shrimp, peeled and deveined
- 2 tbsp Old Bay seasoning
- 1 tbsp Olive oil
Burritos
- 4 large flour tortillas
- 2 c cooked white rice
- 1 c canned black beans
- 2 clove Garlic, minced
- 1 tsp Ground cumin
- 1 tsp Chili powder
- 0.5 tsp Smoked paprika, optional, for a smoky flavor
- 0.5 tsp Dried oregano
- 0.25 tsp Cayenne pepper, adjust to taste, for heat
- Salt, to taste
- Black pepper, to taste
- 0.5 c guacamole
- 1 c shredded Chihuahua cheese
- 0.25 c chopped fresh chives
Spicy Mayo
- 0.5 c Mayonnaise
- 1 tbsp Hot sauce, adjust to taste
- 1 tsp Lime juice
- Salt, to taste
- Black pepper, to taste

Directions

Preparing the Beans
1. Heat olive oil in a skillet over medium-high heat.
2. Add in rinsed beans along with the garlic, ground cumin, chili powder, paprika, oregano, cayenne pepper, salt and black pepper to taste.
3. Mix well to combine and let simmer for 15-20 minutes until the juices have nearly evaporated.
4. Remove from heat.
Preparing the Shrimp
1. In a bowl, toss the peeled and deveined shrimp with Old Bay seasoning until they are well coated.
2. In another skillet, heat olive oil over medium-high heat.
3. Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side, or until they turn pink and opaque.
4. Remove from heat and set aside.
Preparing the Spicy Mayo Sauce
1. In a small bowl, combine mayonnaise, hot sauce, lime juice, salt, and pepper.
2. Mix well to create a smooth and spicy mayo sauce.
3. Adjust the hot sauce according to your preferred level of spiciness.
4. Set aside.
Assembling the Burritos
1. Warm the flour tortillas either in a microwave or on a skillet until they are pliable.
2. Lay out the tortillas and place a portion of cooked white rice in the center of each tortilla.
3. Top the rice with a portion of black beans.
4. Divide the cooked Old Bay shrimp among the tortillas, placing them on top of the beans.
5. Sprinkle shredded Chihuahua cheese over the shrimp.
6. Place a dollop of guacamole on top of the cheese.
7. Drizzle some of the prepared spicy mayo over the guacamole.
8. Sprinkle chopped chives on top.
9. Fold the sides of the tortilla over the filling.
10. Start rolling from the bottom, tucking the sides in as you go, to create a burrito shape and continue rolling until the burrito is fully wrapped.
11. Place the assembled burritos seam side down on a skillet, pressing slightly.
12. After a couple minutes or once the tortilla is a golden brown, flip and repeat on the other side.
13. Remove from heat.
Serving the Burritos
1. Cut the burritos in half diagonally for easier eating, if desired.
2. Serve the Old Bay Shrimp Burritos with extra spicy mayo on the side for dipping.
