- 0.5 c Unsalted butter, cold
- 0.5 c light brown sugar, tightly packed
- 0.25 c Granulated sugar
- 1 Egg
- 0.5 c natural creamy peanut butter
- 1 tsp Vanilla extract
- 1 c Flour, all purpose or gluten free
- 0.5 tsp Baking soda
- 0.5 tsp Baking powder
- 1 c old fashioned rolled oats
- 1 c Chocolate chips

Directions

Preparation
1. First, preheat oven to 350 degrees Fahrenheit.
2. Line a baking pan with parchment paper.
Mixing Ingredients
1. In the bowl of a stand mixer, add cold butter, light brown sugar and white sugar.
2. Mix for 2 to 3 minutes, until no clumps of butter remain.
3. Then, add in egg, creamy peanut butter and vanilla.
4. Stir to combine.
5. Add in flour, baking soda, baking powder, and oats.
6. Stir to combine. Dough will be thick.
7. Fold in chocolate chips.
Baking
1. Use an ice cream scooper to scoop balls of dough onto lined pan.
2. Space about 3 inches apart.
3. Bake for 10 to 11 minutes or until cookies look just barely set in the middle.
Cooling
1. Finally, remove from oven.
2. Cool cookies on pan for 10 minutes.
3. Then, remove carefully to a wire rack.
