Ingredients

Chimichurri Sauce
- 3 mini red peppers
- 1 serrano pepper
- 4 clove Garlic, crushed
- 0.5 c Parsley, chopped
- 2 tbsp Red wine vinegar
- 1 tsp coarse salt
- 0.5 c EVOO
- Pepper
Steak
- 2 NY Strip Steaks
- Salt
- Pepper
- 4 clove Garlic, crushed
- 1 stick Butter
- 2 tbsp Avocado oil
- Rosemary, optional
- Thyme, optional

Directions

For Steak
1. Remove your steaks from the refrigerator 1 hour prior to cooking.
2. Season them with salt on both sides and let them come to room temperature on a wire rack.
3. Preheat a cast iron skillet to medium high heat.
4. Add avocado oil.
5. Once your oil is hot, add your steak to the skillet, pressing firmly down so the entire surface is touching the skillet.
6. Cook your steak for one to two minutes until a sear begins. Once you notice it's starting to sear, add one tablespoon of butter.
7. Once a crispy sear appears, flip your steak and add in 2 tablespoons of butter, crushed garlic and thyme.
8. Use a spoon to baste your steak for another one to two minutes depending on the thickness of your steak.
9. You can check the temperature of your steak by pressing with your finger or using a thermometer.
10. Once your steak is to your desired doneness, remove it from the heat and set aside and let it rest for 10 to 15 minutes before slicing.
For chimichurri sauce
1. Mix all of your ingredients together, cover and let sit in the refrigerator while you cook your meal.
2. Top your steak and enjoy!
