Ingredients

Cheesecake Batter
- 10 ounces mini marshmallows
- 1 pound Cream cheese, room temperature
- 0.25 cup ube jam
- 1.5 teaspoon ube extract
- 3 tablespoons Butter, melted
- 15 Oreo cookies
Crust
- 23 Oreo cookies
- 4 tablespoons Butter, melted

Directions

For the crust
1. Put Oreos in a food processor and blend it till it is a fine crumb.
2. Put it in a bowl and add the melted butter.
3. Mix thoroughly until it has the consistency of wet sand.
4. Line a baking pan with parchment paper.
5. Place the crumbs into the pan.
6. With your hands, spread the crust all the way to the edges while applying pressure.
7. Set aside.
For the Oreo topping
1. Put whole Oreo cookies in a ziplock bag.
2. Using a mallet or small pan, smash the cookies into smaller pieces.
For the cream cheese mixture
1. In a bowl add the cream cheese, ube jam, and ube extract.
2. Mix with a hand mixer until well mixed.
For the marshmallow mixture
1. In a pot on low heat, add the butter.
2. Once the butter has completely melted, add the mini marshmallows.
3. Consistently stir till all the marshmallows have melted.
Combining and setting
1. Quickly add the marshmallows to the cream cheese mixture.
2. Mix with hand mixer until thoroughly incorporated.
3. Add the batter into the pan with the crust.
4. Spread the batter evenly.
5. Add the smashed Oreo bits on top.
6. Apply some pressure onto the cookies pieces so it sticks to the batter.
7. Place in the refrigerator for 2 hours to completely set.
Serving
1. Once set, take out of the pan and cut into smaller pieces.
2. Best serve when chilled.
