Ingredients

- 2 c White vinegar
- 2 c Apple cider vinegar
- 2 tbsp Sugar
- 2 tbsp Salt
- 2 tbsp crushed dried red peppers
- 6 Serrano peppers, thinly sliced
- 1 medium onion
- 6 clove Garlic, thinly sliced
- 6 medium carrots
- 0.5 small cauliflower

Directions

Preparing the Vinegar Mixture
1. Simmer both vinegars, sugar and salt in a saucepan over medium-low heat and cook until dissolved.
2. Set aside to cool.
Preparing the Jars
1. Divide the crushed red peppers between two 1 liter jars.
2. Fill each jar by layering in the carrots, onion, cauliflower, garlic and Serrano peppers until packed.
Note
1. You could just toss everything together in a bowl and then fill the jars but that’s not how my grandmother did it.
Final Steps
1. Pour the vinegar mixture into each jar until it reaches the top.
2. Secure tightly with lid and then give them a gently shake to distribute everything.
3. Place in the sun for 2 hours and then transfer to the fridge to chill.
Note
1. You could also just place it in the fridge from the beginning but shhhh don’t tell me.
