Ingredients

- 1 thick slice Bacon, finely diced
- 1 cup Onion, finely chopped
- 0.5 cup Celery, diced
- 4.5 cup fish stock with clam
- 3 Tbs Wheat flour, cooked with 2 tbsp of butter
- 1.5 cup potatoes with skin
- 1 handful aromatic herbs
- 2 cup clams
- 1 cup whipping cream
- Salt and fresh black pepper, to taste
- Hot sauce, to taste
- Worcestershire sauce, to taste

Directions

1. Cook the bacon in a heavy bottom pot, until it renders its fat and is crispy.
2. Stir in the onion and celery and cook until they become translucent.
3. Pour in the stock and bring to a boil.
4. Lower the heat and slowly add the flour and butter mixture, beating constantly with a whisk to avoid lumps.
5. Simmer for 15 minutes.
6. Stir in the potatoes and aromatics, put the lid on and cook until the potatoes soften, for around 15 minutes.
7. Finally stir in the clams and cream and let it heat up for 2 minutes.
8. Season the soup with salt, pepper, hot sauce and Worcestershire sauce and serve in warm bowls.
