Ingredients

For the mushrooms al pastor
- 2 clove Garlic
- 0.5 Onion, diced
- 2 guajillo chili pepper(s), cleaned and hydrated
- 2 ancho chili peppers, cleaned and hydrated
- 1 cup Pineapple Juice
- 1 Tbs Apple cider vinegar
- pinch Ground cumin
- pinch Oregano
- pinch salt and pepper
- 1 Tbs Achiote
- 2 Tbs Vegetable oil
- 450 g Mushrooms, sliced
To serve
- 2 thin slice Pineapple, seared
- 0.25 cup Cilantro, washed, disinfected and chopped
- 0.25 cup Onion, diced
- 8 Corn tortillas
- Limes, sliced in quarters

Directions

For the mushrooms al pastor
1. Blend the garlic, onion, chilies, pineapple juice, apple cider vinegar, spices, salt and pepper until completely smooth. Marinate the sliced mushrooms with this blend. Heat the oil in a large saucepan and place the mushrooms in. Cook for a few minutes or until they start to brown.
2. Cook at low heat until the sauce is completely absorbed.
3. Remove the mushrooms and place to the side.
To serve
1. Assemble the mushroom tacos with some pineapple slices, chopped cilantro and onion. Accompany with lime to taste. Share and enjoy.
