Tacos
- 6 corn tacos
- 0.5 lbs Oyster mushrooms
Marinade
- 3 tbsp Olive oil
- 1 Lime, juiced
- 1 tsp Paprika, smoked
- 1 tsp Cumin
- 0.25 tsp Salt, or to taste
- 0.25 tsp Pepper, or to taste
Quick-Pickled Red Cabbage
- 2 c Red cabbage
- 2 tbsp Apple cider vinegar
- 0.25 tsp Salt, or to taste
- 0.25 tsp Pepper, or to taste
Serving
- 1.5 Avocados
- 1 Lime, juiced
- pinch Salt
- pinch Pepper
- pinch Chili flakes
- 0.5 c Cilantro
- 1 tbsp Hot sauce, optional

Directions

Preparing the mushrooms
1. Tear the mushrooms into thin strips.
2. In a food storage container, add all the ingredients for the marinade.
3. Add the mushrooms and shake the container with the closed lid to evenly distribute the marinade.
4. You can do this a few hours ahead of time to allow the mushrooms to absorb the flavor.
5. When you are ready to cook, heat a pan over medium-high heat and sauté the mushrooms until they are soft and lightly charred.
Preparing the quick pickled red cabbage
1. Shave the red cabbage thinly with a mandoline slicer and massage it with salt, pepper, and apple cider vinegar.
2. The longer it sits, the more pink it will become.
Serving the tacos
1. Mash the avocado together with lime juice and spices.
2. Prepare the tacos according to package instructions, spread them with the avocado mash, and top them with the mushrooms, red cabbage, and cilantro leaves.
3. Optionally, you can drizzle them with hot sauce for an extra kick.
