Ingredients

Noodles and Vegetables
- 8 oz efu noodles
- 8 shiitake mushrooms, dried or your choice of mushrooms
- 2 stalks Scallions
- 1.5 oz yellow chives
- 3 cloves Garlic
- 1 tbsp Neutral oil
- 1 tsp Sesame oil
Sauce
- 1 c mushroom water
- 1 tbsp Light soy sauce
- 1 tsp Dark soy sauce
- 1 tbsp Oyster sauce
- 1 tsp Sugar
- 0.5 tsp chicken bouillon powder
- 0.125 tsp White pepper

Directions

Prepare the ingredients
1. Give the dried shiitake mushrooms a quick rinse. In a bowl, soak the dried shiitake mushrooms in at least 1 cup of hot water.
2. Cover to let rehydrate.
3. In a large heatproof bowl, add the efu noodles. Pour boiling water over the noodles and let soak for 45-60 seconds, or until slightly softened.
4. Drain, then rinse in cold water to prevent it from becoming too soft. Drain again, then set aside.
5. Slice the scallions into 3 inch batons, separating the green and white parts. For the thicker white parts, slice in half vertically.
6. Slice the yellow chives into 3 inch lengths.
7. Mince the garlic.
8. Once the mushrooms have rehydrated, squeeze out all the water from them into the bowl.
9. Remove the tough stems, then slice the mushrooms. Save the mushroom water for the sauce in the next step.
Prepare the sauce
1. Pour the mushroom water into a liquid measuring cup, and add more water if needed to reach 1 cup.
2. Prepare the sauce by mixing together all the sauce ingredients.
3. Mix well, then set aside.
Make the noodles
1. Heat up a pan on medium-high heat, then add the neutral oil.
2. Add the white parts of the scallions and minced garlic.
3. Stir fry for 1-2 mins or until fragrant.
4. Add the sliced mushrooms, and stir fry for another minute.
5. Add the prepared sauce into the pan.
6. Bring it up to a boil.
7. Add the noodles into the pan.
8. Give the noodles a “shimmy” in the sauce, and mix them well to incorporate the sauce evenly.
9. Gradually, the noodles will soak up the sauce.
10. Once all the sauce has been soaked up, add the yellow chives, scallion (greens), and sesame oil.
11. Give it one last good mix and toss, then it’s ready! It's best enjoyed immediately.
