- 2 lbs chicken thighs and legs
- 6 tbsp Olive oil
- 1 tsp Turmeric
- 1 tsp Paprika
- 1 tsp Cumin
- 1 tsp Coriander
- 0.5 tbsp Garlic, minced
- 0.5 tsp Black pepper, ground
- 0.25 tsp saffron threads, ground
- 2 preserved lemons
- 1 White onion, sliced
- 0.5 c water
- 1 handful Green olives
- 1 Baguette, to serve

Directions

DIRECTIONS
1. Peel the skin off the chicken and wash chicken. Prep with 1 tsp of salt and 1 lemon squeezed.
2. Marinate chicken with 3 tbsp olive oil, 1 tsp turmeric, 1 tsp paprika, 1 tsp cumin, 1 tsp coriander, 1 tbsp minced garlic, ½ tsp ground black pepper, and ¼ tsp saffron threads. Mix well and let marinate at least 30 minutes but overnight is best.
3. In a hot pan, brown the chicken until there is a sear. Add 1 whole onion sliced and mix thoroughly. Add the sliced preserved lemons on top along with ½ cup of water. Put the lid on and cook for 45 minutes on medium-low heat.
4. Top with green olives, serve with fresh baguette style bread, and enjoy.
