Ingredients

- 2 tbsp Butter
- 50 g Dark chocolate, chopped
- 1 Egg
- 15 g Sugar, depending on your preference for sweetness
- 5 g All purpose flour
- pinch Salt
- Butter, to coat the ramekin
- Cocoa powder, to coat the ramekin
- Vanilla ice cream, to serve (optional)

Directions

1. Preheat oven to 450F.
2. Melt butter and chocolate in a microwave safe bowl in 15 second increments until just melted. Mix together and set aside.
3. Whisk the egg and sugar in a separate bowl for 5-7 min until light in color, thick and frothy. Make sure to take your time on this step to get the right outcome!
4. Pour the melted butter and chocolate mixture into the egg mixture and whisk gently until combined.
5. Sift in the flour and salt, and gently whisk in a folding shape until just combined.
6. Take a large ramekin (8oz) and coat with softened butter generously. Add 1 tsp of cocoa powder and tap and rotate to spread. Tap out the excess.
7. Pour the batter into the ramekin - you should still have a little room for the cake to rise.
8. Bake for about 10-11 min. This time can vary based on oven settings, so you may need some trial and error. Your cake should look firmer on the sides but still somewhat jiggly in the center. If in doubt, underbaking is better than overbaking!
9. Let the cake rest in the ramekin for 1 min. Then release the edges with a butter knife and carefully turn out. Serve with vanilla ice cream and enjoy!
