Ingredients

Dashi
- 1.5 c bonito flakes
- 5 inch kombu
- 4 c water
Miso Soup
- 1 scallions
- 3 tbsp miso paste
- 12 oz soft tofu
- 4 c dashi

Directions

Dashi
1. To a pot, add cold water, along with sheets of kombu.
2. Heat over medium, and just as the water begins to simmer, remove the kombu.
3. Add bonito flakes, and simmer over medium for 8 minutes.
4. Turn off the heat, and let steep for another 8 minutes.
5. Finally, filter through a fine-mesh sieve.
Miso Soup
1. To turn the dashi into miso soup, whisk miso paste through a fine mesh sieve to prevent clumps.
2. Add thinly sliced scallion and kombu.
