Ingredients

Cheesecake Base
- 300 g Maria biscuits
- 2 Unsalted butter, sticks
- 0.25 c Sugar
Filling
- 4 8 oz. Cream cheese, room temperature
- 4 Large eggs, room temperature
- 0.75 c Sour cream, room temperature
- 1.5 c mango purée
- 1 tbsp Vanilla extract
- 2 tbsp All purpose flour
- 0.25 tsp Kosher salt

- sugar free coconut
- fresh mango

Directions

Helpful Tips
1. Set an alarm for room temperature ingredients.
2. Before mixing your ingredients, preheat the oven to 325 degrees F.
3. Line your 10” springform pan with parchment paper on the bottom and sides of the pan.
4. Cover the sides of the pan with foil to protect it from water while water bath.
Instructions
1. Brown your butter by cooking it on medium high heat while stirring constantly.
2. Remove from the heat immediately once you have the desired color.
3. Add the butter to your crushed Maria cookies along with the sugar.
4. Add it to your cake pan and make an even layer.
5. Let it sit in the fridge.
6. Now add the cream cheese in a bowl and whisk for a couple of minutes.
7. Then add the sour cream, eggs, vanilla extract, salt and flour and mix until smooth and creamy texture.
8. Finally pour the mango purée in the bowl with the rest of the ingredients.
9. Gently pour the batter into the cake pan.
10. Add spoonful of mango purée on top and swirl it around.
11. Bake it for an hour and a half.
12. It will still be jiggly and soft in the middle (totally fine)!
13. Let it completely cool down before placing it in the fridge overnight.
14. When it’s time to serve, sprinkle some coconut flakes on the edges of the cheesecake.
