Ingredients

Crust
- 1.75 c all-purpose flour
- 0.5 c Granulated sugar
- 0.25 c Cornstarch
- 0.25 tsp Salt
- 0.25 tsp Ground cinnamon
- 2 tsp Sumo Citrus® zest
- 1 c Unsalted butter, cold and diced
Filling
- 1.5 c Granulated sugar
- 2 tsp Sumo Citrus® zest
- 6 tbsp all-purpose flour
- 0.25 tsp Salt
- 6 Large eggs
- 1 tsp vanilla
- 0.75 c Sumo Citrus® juice
- 0.25 c Lemon juice, fresh
- Powdered sugar, for serving

Directions

Preparation
1. Preheat oven to 350°F.
2. Grease and line a 9x13 baking pan with parchment paper and set aside.
For the crust
1. In a food processor, add the flour, sugar, cornstarch, salt, cinnamon and zest and pulse a few times to combine.
2. Add the butter and pulse until the dough roughly comes together.
3. Dump out into the prepared pan and press down into an even layer.
4. Bake until lightly golden brown, about 20 to 25 minutes.
For the filling
1. In a large bowl, combine the sugar and zest.
2. Use your fingers to rub the zest into the sugar to bring out the flavor.
3. Stir in the flour and salt.
4. Add the eggs, vanilla, Sumo Citrus and lemon juice and stir until well combined.
Final Steps
1. Pour into the pre-baked crust and return to the oven.
2. Bake until almost fully set in the center, about 18 to 20 minutes.
3. Remove from the oven and allow to cool for at least 2 hours.
4. Remove from the oven, dust the top completely with powdered sugar and then slice and serve.
5. Enjoy!
