Ingredients

Cheese Sauce
- 8 oz extra sharp yellow cheddar cheese
- 8 oz havarti cheese
- 8 oz Vermont sharp white cheddar cheese
- 8 oz gouda
- 6 oz Gruyere cheese
- 2 tbsp Butter
- 1 tsp All purpose flour
- 1 c Heavy cream
- 1 c whole milk
- 1 tsp Kosher salt
- 1 tsp Black pepper
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 packet sazon
- 1 tsp Italian seasoning
Pasta
- 1 box cavatappi pasta

Directions

Preparation of Ingredients
1. Grate all of your cheese and put it to the side.
2. Add heavy cream and whole milk to a cup and put it in the fridge.
3. Get a large pot of boiling hot water ready and add salt to flavor.
Cooking the Pasta
1. Add your cavatappi pasta and cook until al dente.
Preparing the Sauce
1. In a large pan, add butter and flour stirring instantly to form a roux.
2. Slowly add cold milk and cream mixture to the pan and stir repeatedly.
3. Add enough to form a sauce but don’t use it all.
4. Add half of the seasoning blend to the roux and stir.
5. Remove from the heat and add about a cup of your cheese blend stirring until well combined.
Mixing Pasta and Sauce
1. Drain your pasta and place it back into the large pot.
2. Add the roux and mix into the pasta.
3. Add a cup of your cheese into the pasta and mix.
4. Taste and adjust for seasoning.
5. Use remaining cold milk/heavy cream mix to loosen up the pasta a bit.
Baking the Pasta
1. Preheat your oven to 400 degrees.
2. In a large casserole pan, layer with pasta, cheese, pasta, and cheese and finish with a top layer of cheese.
3. Bake for about 20 minutes.
Serving
1. Serve immediately!
