Ingredients

- 2 lbs Shrimp, chopped
- 3 lobster tail, diced
- 4 strips hickory smoked bacon
- 1 stick Unsalted butter
- 2 tsp Kosher salt
- 2 tsp Black pepper
- 2 tsp Garlic powder
- 2 tsp Onion powder
- 2 tsp Smoked paprika
- 2 tsp Cayenne pepper
- 2 tsp Red pepper flakes
- 2 tsp Old Bay seasoning
- 1 tbsp Flour
- 1 c cold whole milk
- 0.25 c Cheddar cheese
- 2 c gruyere
- 8 slices White cheddar cheese
- Kewpie mayo
- 2 tbsp Olive oil

Directions

Preparing the bacon
1. In a large pan, cook your bacon bits.
2. Add 1 tbsp of butter to the pan to cook the bacon evenly.
3. Drain the bits onto a paper towel.
Preparing the seafood
1. To a separate clean pan on medium heat, add olive oil and a tbsp of butter.
2. Add your diced shrimp and lobster.
3. Cook the shrimp and lobster together for about 8 minutes before adding your seasoning.
4. Season the lobster and shrimp with salt, pepper, garlic and onion powder, smoked paprika, and cayenne pepper.
5. Cook until it reaches its desired doneness.
6. Remove the lobster and shrimp and add remaining butter to the pan removing the bits to create a fond.
Creating the roux
1. Once the butter melts, add flour and mix in thoroughly.
2. Add in cold milk to form a roux.
3. Turn off the heat and add cheddar cheese, red pepper flakes, and Old Bay seasoning.
Assembling and cooking the sandwich
1. To a separate pan, turn the stove to medium low heat.
2. Baste ends of the artisan bread with kewpie mayo.
3. Layer your sandwich like so: Put slice of bread on the pan and add two slices of white cheddar, then the roux, bacon and seafood (lobster and shrimp), gruyere cheese, two more slices of cheese, and the top slice of bread.
4. Let the bread cook on one side and flip only when the side is golden brown.
5. Cooking on medium low allows the bread to toast properly while melting the cheese on the bread and in the middle.
6. Remove from the pan once the cheese is completely melted.
Serving the sandwich
1. Serve and enjoy!
