Linguine
- 1 lb linguine
- 1 c White wine, DRY
- 6 clove Garlic, minced
- 2 Shallots, finely chopped
- 5 tbsp Olive oil, for your pan
- 0.5 tsp Red pepper flakes
- 2 lb little neck clams
- 0.25 c Parsley, fresh, chopped
- 1 tsp Lemon zest
- 0.5 Lemon, juiced
- Salt, to taste

Directions

Step 1: Cook Linguine
1. Cook linguine to al dente in lightly salted water.
Step 2: Prepare the Sauce
1. In a large skillet, sauté your garlic and shallots with your olive oil.
2. After 5 minutes, deglaze the pan with your white wine, add red pepper flakes, clams, salt, parsley.
3. Cover and let simmer for 10-12 minutes.
4. Discard any unopened clams as they were dead.
Step 3: Combine Pasta and Sauce
1. Add your al dente pasta to the skillet with sauce and clams.
2. Add lemon juice and lemon zest.
3. Stir very well, cook for 2-3 more minutes.
Step 4: Serve
1. Serve with some fresh cheese and enjoy!
