Ingredients

For the lentils
- 0.25 cup chorizo, chopped or crumbled
- 0.5 Onion, chopped
- 2 clove Garlic, chopped
- 2 Tbs Cilantro stems, chopped
- 1 cup Lentils, cooked
- 0.5 tsp Cumin
- 0.5 tsp Dried oregano
- pinch salt and pepper
For the tacos
- 1 Avocado, ripe but firm
- 2 Serrano peppers, seedless
- 2 clove Garlic
- 0.25 cup Cilantro, washed and disinfected
- 2 Green tomatoes, quartered
- 0.25 cup Water
- pinch salt and pepper
- 8 Corn tortillas
- 1 Tomato, seedless and diced
- 0.25 Red onion, chopped

Directions

For the lentils
1. In a pan, sear the chorizo until it browns and renders its fat. Add the onion, garlic, cilantro stems and cook until they soften. Stir in the lentils, spices, salt and pepper and cooke while stirring constantly so the lentils brown.
For the tacos
1. In a blender, add the avocado, peppers, garlic, cilantro, green tomato, water, salt and pepper and blend until you get a creamy, thick and homogenous texture.
2. Split the lentil mixture between the tortillas and serve with the creamy avocado sauce, red onion and diced tomatoes.
3. Share and enjoy.
Tip:
1. If you want a spicier sauce, keep the serrano seeds. Or if you want a really spicy sauce, try with habanero pepper instead.
