Ingredients

For the vinaigrette
- 0.5 Orange, juice
- 1 Shallot, finely chopped
- 2 Tbs Fresh rosemary, chopped
- 1 tsp Honey
- 4 Tbs Olive oil
- 1 Tbs Apple cider vinegar
- pinch salt and fresh black pepper
For the salad
- 16 small and fresh scallops
- 4 twig Rosemary, washed and disinfected
- pinch Rock salt
- Fresh black pepper, to taste
- 2 green bell peppers
- 2 yellow bell peppers
- 2 red bell peppers
- 3 cup lentil sprouts

Directions

For the vinaigrette
1. Mix all the ingredients in a jar. Close the jar with a lid and shake vigorously until it creates an emulsion. Place to the side.
For the salad
1. Skewer 2 scallops in each rosemary twig, leaves and all. Sear them in a hot pan and add a splash of vinaigrette.
2. Heat up another pan and sauté the rest of the ingredients with some more vinaigrette until they start to brown.
3. In plates, line up your vegetable mix with lentil sprouts and lay the scallop skewers on top. Garnish with some vinaigrette to taste.
4. Share and enjoy.
