Ingredients

- 1 Tbs Corn oil
- 0.5 Onion, chopped
- 3 clove Garlic, chopped
- 1 cup Carrot, finely diced
- 1 cup Lentils, cooked in unsalted water and drained
- 0.66666666666666663 cup canned tomatoes
- 0.75 cup Frozen peas, unfrozen
- 1 tsp salt flower and fresh black pepper
- 8 leaf Batavia lettuce
- 3 Tbs Cilantro leaves, washed and disinfected
- 3 Tbs Red onion, finely chopped

Directions

1. In a pan, heat the oil and cook the onion, garlic and carrot, until the onion is translucent and the carrot softens.
2. Stir in the lentils and cook while stirring for 5 minutes.
3. Pour the tomatoes and mix well. Let it simmer on low heat.
4. Add the peas, salt flower and fresh black pepper; cook for just one minute to maintain the peas’ color.
5. Serve the lentil picadillo in lettuce leaves as if they were tortillas to assemble your tacos. Garnish with cilantro and red onion.
