Ingredients

- 2 Tbs Coconut oil
- 1 tsp Cumin
- 1 tsp mustard seeds
- 0.5 Onion, chopped
- 2 Serrano peppers, seedless and chopped
- 1 Tbs Ginger, chopped
- 3 clove Garlic, chopped
- 1 tsp Turmeric
- 0.5 tsp Cilantro, dried
- 0.25 tsp Cayenne pepper
- 1 tsp Salt flower
- 1 cup Tomatoes, smashed
- 1 cup Red lentils, soaked
- 3.5 cup Water
- 2 cup Spinach, washed, disinfected and chopped
- 0.25 cup Cilantro, washed, disinfected

Directions

1. In a large pot, heat the oil and toast the cumin and mustard seeds until they change color, this will happen fast, around 10 seconds. Add the onion, peppers, ginger and garlic, along with the spices and tomatoes. Mix well. Stir in the lentils and water and bring to a boil.
2. Lower the heat and simmer for 30 minutes or until the lentils are very soft and break down. Remove from the fire and add the spinach while it’s still hot.
3. Serve along cilantro and whole-grain rice.
4. Share and enjoy.
Tip:
1. the words “dal”, “dhal”, or “daal” are terms used in southern Asia to name skinless legumes. It also refers to dishes prepared with them and can be made with different types of lentils, chickpeas or others like pigeon peas or mung beans.
