Ingredients

For the spicy sunflower seeds
- 1 cup Sunflower seeds
- 1 tsp Olive oil
- 1 Lime, seedless, juice
- 1 Tbs ground dried chili flakes
- 1 Tbs ground cayenne pepper
For the bass steak
- 1 bass loin
- 2 tsp salt flower and fresh black pepper
- 2 Tbs Olive oil
- 1 Red onion, chopped
- 5 clove Garlic, sliced
- 2 Lemons
- 2 Limes
- 3 cup Cremini mushrooms, halved
- 2 cup cooked arborio rice

Directions

For the spicy sunflower seeds
1. Pre-heat your oven to 160°C/300°C.
2. Place the sunflower seeds in a bowl and mix in the rest of the ingredients until fully coated. Spread over a baking tray.
3. Bake for 40 minutes, stirring the seeds every 10 minutes. They should toast lightly and they look dry.
4. Remove from the oven and let them cool. Keep in a jar.
For the bass loin
1. Pre-heat your oven to 200°C/400°F.
2. Clean the bass loin, and lay it on a baking tray lined with parchment paper. Season with salt and pepper.
3. Brush the loin with olive oil and add the red onion, garlic and lemon and lime zest on top.
4. Around the loin, add the mushrooms and sprinkle them with lime and lemon juice.
5. Bake the loin for 10 minutes, then lower the heat to 160°C/300°F; bake for 15 more minutes or until the fish meat looks firm and of a pale white color.
6. Place the loin in a large plate with the mushrooms on top, topped with a sprinkle of spicy sunflower seeds.
7. Serve with a side of arborio rice and enjoy.
