Ingredients

- 3 large onions
- 8 Large eggs
- 0.5 tsp Cumin
- 0.5 tsp Saffron, crushed and brewed in 2 ice cubes
- 0.5 tsp Turmeric
- Salt, to taste
- Pepper, to taste
- 1 tbsp Sour cream, or yogurt
- Olive oil

Directions

1. Crush saffron and add ice. Let ice melt.
2. Thinly slice onions.
3. Heat olive oil in a large pan over medium high heat.
4. Once the oil begins to shimmer, add onions.
5. Add salt to taste and cook, occasionally stirring until nicely caramelized.
6. Add turmeric, cumin, and saffron water and cook an additional two minutes.
7. Let cool completely.
8. In a mixing bowl, crack eggs, season with salt and pepper, and add sour cream.
9. Beat until eggs and sour cream are thoroughly combined.
10. Add in the onions and give it another mix.
11. Heat a generous amount of oil in a 8-inch non-stick fry pan over medium heat.
12. Once it begins to shimmer, add the egg mixture in and spread out evenly with a rubber spatula.
13. Once eggs are golden brown underneath and cooked 3/4 of the way up, run the rubber spatula along the sides to ensure it isn’t sticking.
14. Flip onto a plate so that now the uncooked side is on the bottom.
15. Slide back into the pan and cook until the other side is also golden brown.
16. Remove from heat.
