Ingredients

Chicken
- 1 lb chicken tenders
- 1 tsp Kosher salt
- 0.5 tsp White pepper
- 0.5 tsp Black pepper
- 0.5 tsp Garlic powder
- 0.5 tsp Onion powder
- 0.5 tsp Ginger powder
- 0.25 tsp cayenne powder
Sauce
- 0.5 c Soy sauce
- 3 tbsp Sugar
- 2 tbsp Honey
- 2 tbsp gochujang
- 0.5 tbsp gochugaru
- 1 tbsp Rice vinegar
- 0.25 c water
- 2 quart Neutral oil, for frying
Seasoning Flour
- 2 c Flour, all-purpose
- 1 tbsp Kosher salt
- 1 tbsp White pepper
- 1 tsp Black pepper
- 1 tsp Garlic powder
- 1 tsp Onion powder
Wet Batter
- 0.5 c Flour, all-purpose
- 1 Egg
- 1 c cold soda water
Plain Flour
- 1 c Flour, all-purpose

Directions

Preparing the Chicken and Seasoning
1. In a bowl, mix together kosher salt, white pepper, black pepper, garlic powder, ginger powder, and cayenne pepper.
2. Season the chicken tenders for at least 20 minutes to allow the salt to absorb into the chicken.
Preparing the Seasoning Flour
1. In another bowl, combine your ingredients for the Seasoning Flour and mix well.
2. Add additional sparkling water to the seasoning flour 1-2 tbsp at a time and rub the flour with your hands to create additional craggily bits.
Preparing the Wet Batter
1. In a separate bowl, mix together your Wet Batter ingredients and whisk to combine.
2. In a third bowl, add 1 cup of plain flour.
Coating the Chicken
1. Dust the chicken in the plain flour, then dip your chicken in the Wet Batter and let any excess batter drip off.
2. Next, coat the chicken in the Seasoning Flour and use your hands to pack the coating into the chicken.
3. Place on a tray and let the chicken rest for 15 minutes while you heat up the oil.
Frying the Chicken
1. Fry the chicken in batches at 350F for 4-5 minutes.
2. Remove the chicken and let the oil come back up to 350F, then fry a 2nd time for 1-2 minutes.
3. Remove to a tray and let rest.
Preparing the Sauce
1. In a medium saucepan, mix together the Sauce ingredients and simmer over medium high heat for 3-4 minutes until the sauce has thickened.
2. Coat the chicken in the sauce and enjoy.
