Ingredients

Kofta
- 1.5 lb ground beef or lamb
- 2 Onions, medium, grated
- 1.5 tbsp Salt
- 1 tbsp Pepper
- 0.5 tbsp Paprika
- 0.5 tbsp Cumin
- 0.5 tbsp Coriander
- 1 tsp Cinnamon
- 0.5 tsp Sumac
- 2 tbsp Parsley, chopped
White Sauce
- 1 c mayo
- 1 tbsp Dijon mustard
- 1 clove Garlic, grated
- Lemon, zest of a lemon, juice of 1/2
- 0.5 c Dill, finely chopped
Sumac Onions
- 0.5 Onion, medium-sized, thinly sliced
- 1 tbsp Sumac
- Lemon, juice of 1/2
- pinch Salt
Putting it all together
- Cilantro
- wrap bread
- harissa paste

Directions

Method for Kofta Preparation
1. Grate the onions.
2. Place in cheese cloth or paper towel and squeeze the water out.
3. Add to a mixing bowl with the ground meat.
4. Season with the rest of the listed ingredients above.
5. Let sit for 30 minutes.
6. If you are letting it sit for longer, throw it into the fridge, but remove from the fridge 30 minutes before cooking.
7. Shape your kofta: take a golf ball sized amount and roll into a ball, then stretch into a cylinder about an inch wide.
8. Cook the kofta over medium high heat–it should be fully cooked through by the time both sides are nicely colored.
Method for White Sauce
1. Mix all the above ingredients into a bowl.
Method for Sumac Onions
1. Mix all the above ingredients into a bowl.
Method for Wrap Preparation
1. Toast both sides of your wrap bread of choice in the same pan you cooked your kofta in.
2. Add a layer of harissa paste, followed by the white sauce, kofta, cilantro, and sumac onions.
3. Wrap, slice in half, and enjoy.
