Ingredients

Main Ingredients
- 1 russet potato
- 1 cup kimchi
- 1 Green onion, for garnish
Sauce Ingredients
- 1 tbsp Soy sauce
- 0.75 tbsp Oyster sauce
- 1 tsp Sugar, add a little more if you prefer it to be sweeter
- pinch Salt, to taste

Directions

1. Peel the potato and cut it in half lengthwise, then cut them into thin slices.
2. Heat 1 tablespoon of oil in a non-stick pan over medium heat. Add the sliced potatoes and sauté for about 2-3 minutes until the edges start to turn golden brown.
3. Remove the cooked potato slices from the pan and set aside.
4. In the same pan over medium heat, add a touch of oil and then add in the prepared kimchi. Cook for 30-60 seconds until fragrant.
5. Return the cooked potato slices back into the pan, then add in the soy sauce, oyster sauce, sugar, and salt.
6. Continue cooking for about another minute, ensuring everything is well combined and the potatoes slices are evenly coated with the sauce.
7. Plate the Kimchi & Potato Stir Fry and garnish with chopped green onion on top if desired.
8. Serve hot with a bowl of rice and enjoy.
