Ingredients

Udon Noodles
- 2 Egg yolks
- 1 Egg
- 1 tbsp gochujang
- 0.5 tbsp Soy sauce
- 1 c pecorino Romano
- Black pepper
- udon noodles
- 3 bacon strips
- 0.75 c kimchi
- 1 tbsp kimchi juice
- flaky salt

Directions

Prepare the egg mixture
1. In a bowl add 2 egg yolks, 1 egg, 1 gochujang, soy sauce, cheese & black pepper.
2. Mix well & set aside.
Cook the udon noodles
1. Cook udon noodles according to package & save some of the “pasta” water for later.
Cook the bacon
1. In a pan cook bacon until crispy.
2. Remove and set aside.
Sauté the kimchi
1. In the same pan add kimchi & kimchi juice.
2. Sauté for 2-3 minutes.
Combine and cook
1. Turn heat down to low & add udon noodles.
2. Add in egg mixture, some of the “pasta” water & constantly mix until creamy.
Serve
1. Serve immediately & top off with flaky salt, crispy bacon, egg yolk, green onion & shredded cheese.
