- 1 vidalia onion
- 0.75 c Flour
- 0.75 c Potato starch
- 0.25 c kimchi juice
- 0.125 c water
- 0.25 c kimchi
- 1 Egg
- Salt
- Pepper
- Garlic powder
- Panko breadcrumbs
- Cooking spray
Sauce
- Kewpie mayo
- kimchi juice
- Honey
- gochujang

Directions

1. Cut one side of the onion (not the root) and cut slits 1/2 inch from the root.
2. Soak onion in ice water for 1-2 hours or longer to let the onion fully bloom.
3. Make sure your onion is dry, wipe it down with paper towel and let it drain on a rack.
4. Whisk together batter: flour, potato starch, salt, pepper, garlic powder, egg, kimchi juice, water and kimchi. Make sure the batter isn’t too thick or too thin.
5. Coat onion with a spoon making sure to coat every nook and cranny.
6. Sprinkle breadcrumbs over the onion and air fry onion for 350 degrees for 15-20 minutes until brown and crispy.
7. Enjoy with the sauce above!
Tips
1. Don't forget to grease the bottom of the air fryer pan.
2. Breadcrumbs are good for extra crunch.
3. Cook longer until kimchi batter is crunchy.
