Ingredients

- 1 lb beef
- 6 kaffir lime leaves
- 2.5 Limes
- 0.5 tbsp Sugar
- 3 tbsp Fish sauce
- 4 clove Garlic, chopped
- 1 Shallot, sliced
- 2 bunches Green onion
- 2 tbsp Lemongrass, sliced
- 1 tbsp toasted rice
- 0.333 c Cilantro, chopped
- 5 Thai chilis
Serve With
- Romaine lettuce

Directions

Preparation of Ingredients
1. Cut all fresh ingredients: garlic, kaffir lime leaves, lemongrass, shallots, cilantro, green onions, and Thai chilis.
2. Toast your rice in a pan, with no oil. Once the rice is toasted, ground it in a food processor or mortar and pestle.
Preparing and Cooking the Steak
1. Season steak with a little bit of salt (not too much because the fish sauce is salty) and pepper.
2. Sear steak for about 5 minutes on each side.
3. Let the steak rest for 5 minutes before chopping into cubes.
Combining Ingredients
1. In a bowl, combine steak, all fresh ingredients, sugar, fish sauce, lime juice, and mix well.
2. Then add toasted rice and cilantro.
3. Mix again and adjust seasoning if needed.
Serving
1. Serve with fresh vegetables or rice.
