Ingredients

Macaroni and Cheese
- 1 lb elbow macaroni
- 3 Onions, chopped
- 8 Tbs Butter, save about 2 tbs to add to the lower noodle layers
- 2 Tbs Oil
- 1.5 Lbs Swiss cheese, grated

Directions

1. Preheat oven to 350°.
2. Put butter/oil in a pan on the stove top on medium high heat. Add the chopped onions and stir to cover the onions. Lower the heat to medium and stir occasionally until they reach a golden brown color. Make sure not to burn them.
3. Meanwhile, bring a pot of salted water to a boil, and cook pasta to Al dente. Drain pasta.
4. While the pasta is cooking, grate your Swiss cheese and set aside.
5. In a deep bowl or deep casserole dish (the deeper the bowl, the more the butter from the onions reaches the bottom layers), begin layering the pasta with the cheese. You can do a bunch of “small” layers or a few “big” layers. I usually start with pasta and end with a layer of cheese. Just make sure you are evenly distributing the pasta/cheese.
6. If your onions are done, and you have enough, feel free to layer a few onions throughout.
7. After you’ve finished the layers, cover the top with any leftover cheese.
8. Top everything with the caramelized onions in an even layer.
9. Cover your dish with foil, and put in the oven until the cheese is fully melted. I would say about 10-20 min.
Note
1. This dish is all about the buttery onions. My family will fight over them. Always make more than you think. I will sometimes make 4-5 onions, just to have enough!
