Ingredients

Millet Recipe
- 0.5 c millet
- 0.5 c Coconut milk
- 0.25 c water
- 1 clove Garlic, minced
- 0.5 tsp Ginger, fresh grated
- 0.25 c Green onion, chopped
- 0.25 tsp Thyme
- 0.25 tsp Allspice
- 0.5 tsp Salt
- 0.5 c kidney beans

Directions

Dry roasting the millet
1. Dry roast millet in a pot for 3-5 minutes on medium-low heat, or until the millet smells nutty and is popping.
Adding ingredients and boiling
1. Add coconut milk, water, garlic, green onion, ginger, and salt.
2. Bring to a soft boil.
3. Reduce heat to low and cover.
Final cooking and resting
1. Allow to cook for 12-17 minutes or until millet has cooked and water is absorbed.
2. Remove from heat for 5 minutes.
3. Add kidney beans and use a fork to fluff millet and mix in beans.
Alternative method
1. Alternatively, beans can be added with coconut milk and seasonings.
Additional note
1. If all the water dries out before the millet is fully cooked, add ¼ cup of water at a time without stirring and keeping it covered.
