Ingredients

Tacos
- 4 corn tacos
- 4 hardshell tacos
Jackfruit Filling
- 1 can green or young jackfruit
- 1 tsp Smoked paprika
- 1 tsp Paprika
- 0.5 tsp Cumin
- 0.5 tsp Turmeric
- 2 clove Garlic, finely diced
- 0.5 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste
- 3 tbsp Olive oil
- water, as needed
To Serve
- 0.5 c pickled red cabbage
- 1 Avocado, sliced
- 2 tbsp Hot sauce
- 2 tbsp Sriracha chili mayonnaise

Directions

Preparing the Jackfruit
1. First, drain and rinse the jackfruit.
2. Use your hands to shred the pieces until they resemble pulled pork.
3. Then, mix in minced garlic, olive oil, and your favorite spices.
4. You can do this step a day ahead of time for even more flavor.
5. Next, heat up some olive oil in a pan over medium-high heat.
6. Add the marinated jackfruit and about 1/4 to 1/2 cup of water.
7. The longer you cook it, the more tender and flavorful it becomes.
8. Aim for around 30 minutes of cooking time.
9. Once the water has evaporated, give the jackfruit a good sear to add some roasted flavor.
Assembling the Tacos
1. For extra crunch and heat, this recipe recommends using a hard-shell taco on the outside and spreading chili sauce between the soft and the hard-shell taco.
2. The tacos are then topped with pickled red cabbage, sliced avocado, and a drizzle of Sriracha chili mayonnaise.
