- 1 c Red lentils, thoroughly washed
- 1 tbsp Olive oil
- 1 Onion, finely diced
- 2 clove Garlic, finely chopped
- 1.5 inch Ginger, grated or finely chopped
- 2 Tomatoes, diced
- 1.5 c Tomato sauce
- 1 c Coconut milk
- 3 tsp Indian Curry Blend
- 0.5 tsp Salt, or to taste
- 0.25 tsp Pepper, or to taste
- water, as needed

- 0.5 c Cilantro leaves
- 1 Lime, cut into wedges

Directions

Preparation of lentils and spices
1. Thoroughly wash the red lentils.
2. Heat olive oil over medium-high heat in a pot.
3. Sauté the finely diced onion with salt until translucent.
4. Add two cloves of finely chopped garlic, ginger, the Indian curry blend (or alternatively Garam Masala, cumin, and turmeric), and diced tomatoes.
5. Let the mixture cook for a few minutes.
Adding lentils and simmering
1. Add the washed red lentils, tomato sauce, and coconut milk to the pot.
2. Let everything simmer for about 20 minutes, or until the lentils are soft.
3. If necessary, add water to adjust the consistency.
Serving suggestions
1. To serve, garnish with cilantro leaves and a lime wedge.
2. This dish pairs well with basmati rice and naan.
