- Wood ear mushroom
- White beech mushrooms
- 0.5 pack Firm tofu
- 0.333 c Bamboo shoots
- White pepper
- Salt, pinch
- Chicken soup powder
- Sugar, pinch
- Red pepper flakes
- 2 tbsp Soy sauce
- 0.5 tbsp Dark soy sauce
- 0.5 tbsp Sesame oil
- 3 Eggs, whisked
- 3 tbsp Vinegar
- Green onion
- Cilantro

Directions

Preparation of Ingredients
1. Soak 3 dried shiitake mushrooms for 20 minutes.
2. Clean and cut wood ear mushrooms, beech mushrooms, and shiitake.
3. Cube firm tofu.
Preparing the Soup
1. In a pot, add chicken broth, 1 Cup of mixed mushrooms, bamboo shoots, soy sauce, and dark soy sauce.
2. Next, add white pepper, pinch of salt, chicken soup powder, sugar, and red pepper flakes.
3. Next, add sesame oil, tofu, and corn starch slurry to thicken the soup. Cook for 2-3 minutes.
Final Steps
1. Next, slowly whisk in 3 beaten eggs.
2. Turn off the heat and add vinegar, green onions, and fresh cilantro.
