Ingredients

Chicken
- 1 lb Chicken thighs, boneless skinless
- 3 oz A Dozen Cousins Honey Jerk Chicken Marinade
Salsa
- 2 Roma tomatoes, halved
- 0.5 large yellow onion
- 4 clove Garlic, peeled
- 4 habaneros
- 2 mangos
- pinch Salt
- 2 tbsp Olive oil
- 1 tbsp Apple cider vinegar
- 1 Lime, juiced
Other
- tortillas
- Onion, chopped for garnish
- Cilantro, chopped for garnish

Directions

Marinating the Chicken
1. Add the chicken to a bowl along with the marinade and refrigerate for 30 minutes to 4 hours.
Preparing the Salsa
1. Remove the seeds and stems from the habaneros.
2. Add them to a small pot with enough water to simmer the habaneros as well as the tomatoes, onion, and garlic.
3. Simmer for 2-3 minutes.
4. Strain and add to a blender along with the mangos, salt, olive oil, and lime juice.
5. Blend until smooth.
6. Place into a bottle or container and refrigerate for at least 1 hour.
Cooking the Chicken
1. Cook the chicken on a hot grill for about 5 minutes each side or until an internal temperature of 160 F.
Assembling the Dish
1. Chop the chicken and pile onto a tortilla with some onion and cilantro.
2. Drizzle with the mango habanero hot sauce.
