Ingredients

Honey Habanero Wing Sauce
- 3 Habaneros
- 1 stick of unsalted butter
- 0.25 c Hot sauce, Louisiana brand
- 0.5 c Honey
- 1 tsp Worcestershire sauce
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
Chicken Wing Seasoning
- 3 lbs cut chicken wings
- 1 tbsp Olive oil
- 1 tsp season all
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 2 tsp cracked black pepper
- 1 tsp Paprika
- 1 tsp Kosher salt, your preference
- 2 tbsp Cornstarch
- Canola oil, for frying

Directions

Instructions for Honey Habanero Wings Sauce
1. To roast habanero peppers, wash and dry them.
2. Heat a skillet over high heat, add 1 tsp of olive oil (optional), and carefully place the peppers in the skillet. Let them sit for 1-2 minutes to blister and char.
3. Turn the peppers using tongs to expose all sides to heat, cooking for another 1-3 minutes. Look for a slightly charred appearance.
4. Transfer to a plate using tongs and set aside for blending.
5. In a medium pan or pot over low heat, melt the butter, add the hot sauce, honey, Worcestershire sauce, smoked paprika and garlic powder.
6. Whisk until the ingredients start to caramelize.
7. Add the wing sauce into a blender along with the Habaneros (stems cut off) and blend on low speed until the habaneros break down into the sauce. (do not over-blend)
8. Keep sauce in the blender container or pour in a glass jar with a lid until the wings are done frying.
Instructions for Seasoning and Frying Chicken Wings
1. In a large bowl add your cut and cleaned chicken wings, then add in the chicken wing ingredients and mix until chicken is coated.
2. Fry wings at 365 degrees for roughly 10-12 minutes until they are floating and crispy brown (or 165 degrees internal)
3. Drain chicken on a wire cooling rack then transfer the wings into a large mixing bowl.
4. Pour the sauce over the wings and toss until all the wings are coated. Enjoy!
Pro Tip
1. Do not overcrowd the pan or fryer. Cook the chicken wings in batches.
