Cornmeal Mixture
- 1.25 c Cornmeal
- 0.75 c self-rising gluten free flour
- 0.25 c Sugar
- 0.25 c Brown sugar, packed
- 0.25 tsp pink Himalayan salt
- 0.5 c Vegan butter, melted but cool
- 0.25 c vegan mayonnaise
- 1 tbsp Apple cider vinegar
- 1 cup unsweetened almond milk

Directions

Preparation
1. Preheat oven to 350 degrees.
2. Place parchment paper into a 8-inch by 8-inch square cooking dish.
Combining Dry Ingredients
1. In a medium bowl, combine cornmeal, gluten free self-rising flour, sugar, brown sugar, and pink Himalayan salt.
Mixing Wet Ingredients
1. Mix together apple cider vinegar and unsweetened almond milk - stir for 1 minute.
2. Combine with melted vegan butter and add to cornmeal mixture.
3. Stir well.
4. Add vegan mayonnaise and stir until combined.
5. Scrape the mixture into baking dish.
Baking
1. Bake until the edges and top are golden brown, about 25 to 32 minutes.
