Ingredients

Pasta Dough
- 400 grams Flour
- 3 Large eggs
- 1 Egg yolk
- 1 Tbsp Olive oil
- 0.5 tsp sea salt
Shrimp and Seasoning
- 8 Shrimp
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Garlic powder
- 1 tsp Smoked paprika
- 0.25 cup Ricotta
- Parmesan, to liking
- 1 tsp Italian seasoning

Directions

Preparing the Dough
1. All-purpose flour works, but more preferable is 00 or semolina.
2. Mixing the dough can also be done in a stand mixer.
3. Make a well with the flour and to the center add in the eggs and yolk, oil, and salt.
4. Beat the eggs slowly adding flour from the well walls.
5. Soon a paste-like dough will form.
6. Then you can use your hands to mix the rest and form a dough.
7. Knead dough until smooth. When you poke it, the dough should gradually bounce back.
8. Cover with plastic wrap and let rest for 30 minutes.
Preparing the Filling
1. While the dough rests, chop up the shrimp and season it.
2. Saute for 1-2 minutes in butter and lemon juice.
3. Transfer to a bowl and add in the ricotta cheese, Parmesan cheese, and Italian seasoning.
4. You can add an egg to bind it and make it more of a creamy ricotta mixture. I opted to skip it.
Laminating the Dough by Hand
1. Flour your surface.
2. Cut the dough into fourths.
3. With a roller, roll the dough.
4. Then fold one end to the center then the other end over it.
5. This will work to square it out.
6. Rotate it and roll out again.
7. Repeat the fold and roll out again.
Rolling and Cutting the Pasta
1. Now we want to roll it flat and thin until you can see the color of your hand through it. About 1-2 mm thick.
2. Cut pasta sheet in half and add filling.
3. Brush other half with water and place it over the top, wet side down.
4. Use a ravioli stamp and cut the squares.
Cooking and Serving
1. Cook in salted water for 2-3 minutes. Fresh pasta cooks very quickly.
2. Toss it in the sauce of your choice and enjoy.
